Dr. Pedro Elez-Martínez is Associate Professor of Food Science and Technology at University of Lleida, Spain, and Member of the research unit Novel Lleida Technologies for Food Processing. His main area of research is developing pulsed electric fields technology for assuring the safety of plant-based products, keeping the nutritional and sensory properties of food as well as the health-related compounds.
