The Workshop

The 2013 Nonthermal Food Processing Workshop will be held for the first time in Latin America. It will focus on innovative processes of great interest for both the industries and the academia. The event will gather some of the most recognized experts worldwide to communicate the recent scientific and technological advances in the field. The 2013 Workshop is supported by the Institute of Food Technologists (IFT) and the European Federation of Food Science and Technology (EFFoST), and will comprehend the following topics:

  • Food safety and legislation;
  • Marketing, competitiveness and innovation;
  • Quality focusing on nutritional and sensory issues;
  • Sustainability (considerations on energy, water, wastes and co-products).

The following processes will be focused in the event, among others:

  • Active and intelligent packaging
  • Cold plasma
  • Emulsification, extraction and texturization
  • High pressure
  • Irradiation
  • Membrane
  • Modified and control atmosphere
  • Ozone
  • Pulse electric field
  • Supercritical fluids
  • Ultrasound
  • UV and pulse light
